Ascalonese cuisine
Dear subjects,
no doubt our flag has a pretty strong cultural identity with all its legends and traditions, nonetheless we don't have any typical dish. What would be Italian culture without pizza and pasta? Chinese without spring rolls and noodles? France without wine and cheese? Pfft! Ascalon needs its cuisine too, so I hereby announce our first cooking contest ever!
The cooking contest
All you have to do is find or create a recipe and execute it, then take a picture of your culinary masterpiece, upload it somewhere on the internet and post here a link as well as its recipe. If you are not able to upload it anywhere just shoot me a PM and I'll post it for you.
You can both work on an existing recipe or create one from the scratch. If you choose an existing recipe, please 1) make sure it's not already a traditional dish of another cuisine, 2) try to add something of your own, even a small ingredient.
Judging criteria
a. Creativity...
...in the recipe, in the name of the dish, in the form (bonus point if you post the recipe in a poetical form)
b. Appearence...
...the better your pictures looks, the more points
c. Ingredients and taste...
...bonus points for including at least one of the two typical ingredients of Ascalonese cuisine (scallion and tarragon), as well as guessing the King's tastes.
Rules
Recipes can be written in any of the four official languages (English, Italian, Spanish, Dutch).
You have to write your name on a piece of paper next to the plate
Deadline: July, 26.

Re: Ascalonese cuisine
...but what is food without wine?
The wine degustation contest
If you are a bit familiar with wine degustation, you certainly know that it's done in three stages: a visual assessment, an olfactory assessment and finally a tasting assesment.
The best Ascalonese sommeliers can express these stages with a haiku, each line of it describes one of those stages.
In the first line (5 syllables) you'll have to express a visual impression, in the second one an olfactory impression, in the last one a flavour.
Your haiku should be posted in the following form:
Wine name*
Grapes**
5 syllables line (visual)
7 syllables line (olfactory)
5 syllables line (flavour)
*a fantasy name
**real grapes your wine is made from (1 up to 3 grape varieties)
Judging criteria
Complying with the rules of the haiku and wine degustation.
Using technical words and common flavours/scents in wine tasting.
Rules
Haiku's can be written in any of the four official languages (English, Italian, Spanish, Dutch).
Deadline: July, 26.

Re: Ascalonese cuisine
ok... another difficult task... is not enough black making me do a art thing? lol
lets go... i have some questions:
1) You can both work on an existing recipe or create one from the scratch. If you choose an existing recipe, please 1) make sure it's not already a traditional dish of another cuisine, 2) try to add something of your own, even a small ingredient.
that means i cant do sushi for example? even if have my special ingredients? lol
2) the wine name, i can invent one? and about the graples, i didnt really get what u want to mean with that "(1 up to 3 grape varieties)"

I dont think we can but can we do a dessert for the recipe??

Re: Ascalonese cuisine
1. Is that a rule? Or it only gives bonuses? I think if I use technical words /words that express common flavours, I'll use up all the incredibly long 5-7-5 syllables! xDPishkirlin wrote:Judging criteria
Using technical words and common flavours/scents in wine tasting.
I would like to use other words... something more creative / free style for my haiku. Even if those words can't normally be associated with wine. I mean, since we all know what I'll be talking about anyway... describing appearance, smell and taste... Can I?
2. In the very unlikely but possible case I manage to produce more than one decent dish during my experiments in the kitchen xD... Can I post more than one?
3. Do we have to write the name of our dish on a piece of paper and put it next to the plate?

Not a rule, just a bonus.
As for the second question I am not sure I have understood what you mean. You can write your haiku as you wish, the only rule you have to respect is the structure of the haiku itself and the reference to the three senses.
Ok, I guess I can come up with an example.
Najabat
Sangiovese and Shiraz
Resplendent carmine,
Intense scent of black currants -
Herbs and black cherry.
Be my guest.

Oh, I forgot to mention a very important rule. You have to write your name on a piece of paper next to the plate... it's the only way I can see that the dish is actually made by you.3. Do we have to write the name of our dish on a piece of paper and put it next to the plate?

Re: Ascalonese cuisine
Yes, I would rather prefer if you don't prepare sushi... but if you can't do otherwise at least add your own ingredients and change its name with one created by you.Azeitona wrote:1) You can both work on an existing recipe or create one from the scratch. Grape variety is the type of grape. Some wines are made only from one grape, some others are made from more blended varieties.2) the wine name, i can invent one? and about the graples, i didnt really get what u want to mean with that "(1 up to 3 grape varieties)"
Example: Brunello di Montalcino is made only from Sangiovese, while Chianti can be made by several grapes: Sangiovese, Malvasia, Trebbiano and Canaiolo.
This link can help you finding grape varieties for your wine.

First recipe from... the Queen Mother herself!
It looks great, too bad the QM forgot as usual that I hate zucchini. >.<
I'll post soon the recipe itself.
I think I'll name it... Sliced yellow-tail dragon.

Re: Ascalonese cuisine
The QM cheating? OMG. She's not participating, she just sent a picture of a dish she made on the occasion. Besides, I told her about the contest and she accepted to cook something, but do you realize that putting next to the plate a piece of paper with "Pish's mom" was asking her too much? She doesn't call me Pish, as you can imagine.Piratus wrote:How do we know you are not cheating? There is no name on that meal

Re: Ascalonese cuisine
I did brownies for my recipe.. not very original but basically I did it just for fun. (It even looks like a disaster but everything kept falling off of the brownie xD) ANd the rasberries and cream are to represent the colors of Ascalon. (marron and white) ( but the red is not the good one)
Here's the recipe:
Gul-o-bulbul
---And the recipe was in french so my translation might not be the exact thing.
Ingredients: 1CUp of flour
-75g of chocolate
-half of a leaven bag
-A very little bit of salt
-1/2 cup of butter
-1 cup of sugar
-2 eggs
-Vanilla ( at your choice)
STEPS:
1- Melt the chocolate
2-Mix the butter, the sugar, the eggs, the vanilla and the melted chocolate together.
3- Progressively add the flour, the salt and the leaven.
4-Cook 20-30 minutes at 350 F
5-Eat...(yummy)
(this is a really short description but the base)

The name I propose is...
Gul-o-bulbul
it's Persian for "The rose and the nightingale"... the raspberries remind of roses, while the brownie with cream looks like a nightingale*.
*at least in my imagination it does

Dragon Lamb
I can't explain how delicious it was lol.
Recipe for the Dragon Lamb
Ingredients:
- Lamb chops
- Dry dragon scales (tarragon)
- Olive oil
- Butter
- White wine
- Breadcrumbs/cornflour
- Roasted potatoes/mashed potatoes
- Salt and ground black pepper
Cook the lamb chops on some olive oil until they're golden... season with the dragon scales, black pepper and salt... as simple as that.
For the tarragon sauce... reduce the white wine (or whatever it's called lol)... add dry dragon scales, a bit of butter, breadcrumbs/cornflour and a bit of salt... keep stirring till you have a thick and homogeneous sauce...
You can serve it with mashed potatoes or roasted potatoes... or whatever lol.
Enjoy, it's absolutely delicious...
* Make a rose with tomato peel for decoration lol xD
* The pics are not so great but it's all I got lol.

Another dish from the Royal Family: Al-Khader Tuna.
Too lazy to post the recipe but it's grilled tuna with green pepper on a scallion and green pepper pancake.
